Baked Potato Skins
Ingredients
  • 4 large baking potatoes
  • 1/4 cup melted butter
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon smoked paprika
  • 2 cups cheddar cheese, shredded

Steps
  1. Preheat oven to 400 degrees F and line a baking sheet with parchment paper.
  2. Scrub the potatoes clean and pat dry. Pierce the potatoes with a fork several times on each side.
  3. Brush the potatoes with melted butter and sprinkle with garlic powder, onion powder, black pepper, and smoked paprika.
  4. Bake for 45 minutes or until potatoes are soft when squeezed gently.
  5. Remove from oven and let cool slightly. Cut each potato in half lengthwise.
  6. Scoop out the inside of the potato leaving about 1/8 inch of potato flesh in the skin.
  7. Place potato skins onto prepared baking sheet, skin side up. Fill each potato skin with 1/4 cup of cheddar cheese.
  8. Bake for an additional 15 minutes or until cheese is melted and bubbly.
