Baked Potato Salad
Ingredients
  • 4 medium potatoes
  • 1/4 cup butter, melted
  • 1/2 cup mayonnaise
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Steps
  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Scrub potatoes and pierce each several times with a fork.
  3. Bake in preheated oven for 1 hour or until done.
  4. When cool enough to handle, cut the potatoes into cubes.
  5. In a large bowl, combine the potatoes, butter, mayonnaise, parsley, garlic powder, onion powder, salt and pepper.
  6. Mix together until evenly coated.
  7. Cover and chill in the refrigerator for several hours before serving.
