- 4 medium potatoes
- 1/4 cup butter, melted
- 1/2 cup mayonnaise
- 2 tablespoons chopped fresh parsley
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Preheat oven to 375 degrees F (190 degrees C).
- Scrub potatoes and pierce each several times with a fork.
- Bake in preheated oven for 1 hour or until done.
- When cool enough to handle, cut the potatoes into cubes.
- In a large bowl, combine the potatoes, butter, mayonnaise, parsley, garlic powder, onion powder, salt and pepper.
- Mix together until evenly coated.
- Cover and chill in the refrigerator for several hours before serving.
