- 4 large potatoes
- 1/4 cup olive oil
- 2 tablespoons grated Parmesan cheese
- 1/2 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- Salt and freshly ground black pepper to taste
- Preheat oven to 375 degrees F (190 degrees C). Grease a baking sheet.
- Cut potatoes into 1/4-inch thick slices. Place in a medium bowl and drizzle with olive oil.
- In a small bowl, mix Parmesan cheese, oregano, garlic powder, salt and pepper. Sprinkle over potatoes and toss to coat.
- Arrange potato slices in a single layer on the prepared baking sheet. Bake for 20 minutes in the preheated oven, or until golden brown.
- Remove from oven and serve.
