- 2 cups rolled oats
- 1 tsp baking powder
- 1/2 tsp sea salt
- 1/4 cup maple syrup
- 1/4 cup melted coconut oil
- 2 eggs, whisked
- 1 tsp vanilla extract
- 3/4 cup milk of choice
- Preheat oven to 350°F (176°C). Grease a 12-cup muffin tin.
- In a medium bowl, mix together the oats, baking powder, and salt.
- In a separate bowl, mix together the maple syrup, melted coconut oil, eggs, vanilla extract and milk.
- Add wet ingredients to dry ingredients and stir until combined.
- Divide the mixture evenly among the muffin cups.
- Bake for 25 minutes or until golden brown. Let cool for 5 minutes before serving.
