Baked Oatmeal Cups
Ingredients
  • 2 cups rolled oats
  • 1 tsp baking powder
  • 1/2 tsp sea salt
  • 1/4 cup maple syrup
  • 1/4 cup melted coconut oil
  • 2 eggs, whisked
  • 1 tsp vanilla extract
  • 3/4 cup milk of choice

Steps
  1. Preheat oven to 350°F (176°C). Grease a 12-cup muffin tin.
  2. In a medium bowl, mix together the oats, baking powder, and salt.
  3. In a separate bowl, mix together the maple syrup, melted coconut oil, eggs, vanilla extract and milk.
  4. Add wet ingredients to dry ingredients and stir until combined.
  5. Divide the mixture evenly among the muffin cups.
  6. Bake for 25 minutes or until golden brown. Let cool for 5 minutes before serving.
  7. Enjoy!
