Ingredients
  • 2 large eggplants, sliced into 1/2-inch thick rounds
  • 1 teaspoon salt
  • 1/2 cup all-purpose flour
  • 3 large eggs, lightly beaten
  • 1 cup Italian-style bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup olive oil
  • 3 cups marinara sauce

Steps
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Sprinkle eggplant slices with salt and let sit for 20 minutes. Pat dry with paper towels.
  3. Place flour, eggs and bread crumbs in separate shallow bowls.
  4. Dip each eggplant slice in flour, then eggs and finally bread crumbs, coating evenly.
  5. Place on a greased baking sheet and sprinkle with Parmesan cheese. Drizzle olive oil over slices.
  6. Bake for 30 minutes or until golden brown. Serve with marinara sauce.
