- 2 large eggplants
- 1/4 cup olive oil
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon paprika
- Salt and pepper to taste
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Cut the eggplants into 1/2-inch thick slices. Place the slices in a large bowl and drizzle with olive oil.
- Add garlic powder, onion powder, paprika, salt, and pepper. Toss until evenly coated.
- Spread the slices on the prepared baking sheet. Bake for 20 minutes or until golden brown.
