- 6 slices bacon
- 2 hard-boiled eggs, peeled and chopped
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 teaspoon white vinegar
- Salt and pepper to taste
- Cook bacon in a large skillet over medium heat until crisp. Drain on paper towels.
- In a medium bowl, combine eggs, mayonnaise, mustard, vinegar, salt and pepper.
- Crumble bacon into the egg mixture and stir to combine.
- Serve on top of a bed of lettuce or as a sandwich filling.
