Ingredients
  • 6 slices bacon
  • 2 hard-boiled eggs, peeled and chopped
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon white vinegar
  • Salt and pepper to taste

Steps
  1. Cook bacon in a large skillet over medium heat until crisp. Drain on paper towels.
  2. In a medium bowl, combine eggs, mayonnaise, mustard, vinegar, salt and pepper.
  3. Crumble bacon into the egg mixture and stir to combine.
  4. Serve on top of a bed of lettuce or as a sandwich filling.
