Bacon Spinach Friā€¦
Ingredients
  • 6 slices bacon
  • 1/2 onion, diced
  • 1 clove garlic, minced
  • 3 cups baby spinach leaves, chopped
  • 6 eggs, beaten
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Steps
  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Cook bacon in a large skillet over medium heat until crisp. Remove bacon from pan and set aside. Reserve 1 tablespoon of the bacon grease in the pan.
  3. Add onion and garlic to the remaining bacon grease in the skillet and cook until onion is tender. Add spinach and cook until wilted.
  4. In a large bowl, whisk together eggs, milk, salt, and pepper. Stir in cooked vegetables.
  5. Pour egg mixture into a greased 9-inch pie plate or baking dish. Arrange bacon slices on top.
  6. Bake for 25 minutes or until eggs are set.
