Baba Ghanoush
Ingredients
  • 2 large eggplants
  • 1/4 cup tahini
  • 2 cloves garlic, minced
  • 1/4 cup lemon juice
  • 1 teaspoon salt

Steps
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Prick the eggplants with a fork and place on baking sheet.
  3. Bake in preheated oven for 30 minutes, or until soft.
  4. When cool enough to handle, scoop out the pulp and discard skins.
  5. Mash the pulp with a fork or blend in a food processor; mix in tahini, garlic, lemon juice and salt.
  6. Serve at room temperature or chilled.
