- 4 large potatoes
- 1/4 cup BBQ sauce
- 1/2 cup shredded cheddar cheese
- 1/4 cup crumbled bacon bits
- Salt and pepper to taste
- Preheat oven to 375 degrees F (190 degrees C).
- Scrub potatoes, and pierce several times with a fork.
- Bake in preheated oven for 45 minutes.
- Cut potatoes in half lengthwise, and scoop out insides, leaving a thin shell.
- Brush inside of potato shells with BBQ sauce.
- Sprinkle with cheese and bacon bits.
- Return to oven, and bake for an additional 10 minutes.
- Season with salt and pepper to taste.
