- 1/2 cup sushi rice
- 1/4 cup rice vinegar
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1 ripe avocado, sliced into strips
- 4 sheets nori seaweed
- Cook the sushi rice according to package instructions.
- Mix the vinegar, sugar, and salt in a small bowl until combined.
- Lay a sheet of nori on a bamboo mat or cutting board. Spread the cooked sushi rice evenly over the nori, leaving about 1/2 inch of space at the top.
- Arrange the avocado strips in a line down the center of the roll.
- Using your hands or a wet spatula, press down lightly on the ingredients to secure them in place.
- Fold one edge of the nori up and over the filling. Press down lightly with your fingers to secure it.
- Continue rolling until you reach the end of the nori sheet. Wet your finger with water and run it along the seam to help seal it closed.
- Repeat with remaining ingredients and cut into 8 pieces with a sharp knife. Serve immediately.
