Avocado Sushi Roll
Ingredients
  • 1/2 cup sushi rice
  • 1/4 cup rice vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1 ripe avocado, sliced into strips
  • 4 sheets nori seaweed

Steps
  1. Cook the sushi rice according to package instructions.
  2. Mix the vinegar, sugar, and salt in a small bowl until combined.
  3. Lay a sheet of nori on a bamboo mat or cutting board. Spread the cooked sushi rice evenly over the nori, leaving about 1/2 inch of space at the top.
  4. Arrange the avocado strips in a line down the center of the roll.
  5. Using your hands or a wet spatula, press down lightly on the ingredients to secure them in place.
  6. Fold one edge of the nori up and over the filling. Press down lightly with your fingers to secure it.
  7. Continue rolling until you reach the end of the nori sheet. Wet your finger with water and run it along the seam to help seal it closed.
  8. Repeat with remaining ingredients and cut into 8 pieces with a sharp knife. Serve immediately.
