- 1 lb. pasta (rotini, penne, or other short pasta)
- 2 large avocados, diced
- 1 pint cherry tomatoes, halved
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Cook pasta according to package instructions.
- In a large bowl, combine cooked pasta with diced avocados and halved cherry tomatoes.
- In a small bowl, whisk together olive oil, lemon juice, garlic powder, salt and pepper.
- Pour the dressing over the salad and toss to combine.
- Serve immediately or refrigerate until ready to serve.
