Ingredients
  • 1 lb. pasta (rotini, penne, or other short pasta)
  • 2 large avocados, diced
  • 1 pint cherry tomatoes, halved
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Steps
  1. Cook pasta according to package instructions.
  2. In a large bowl, combine cooked pasta with diced avocados and halved cherry tomatoes.
  3. In a small bowl, whisk together olive oil, lemon juice, garlic powder, salt and pepper.
  4. Pour the dressing over the salad and toss to combine.
  5. Serve immediately or refrigerate until ready to serve.
