- 2 ripe avocados, halved and pitted
- 2 cups cherry tomatoes, halved
- 1/4 cup fresh basil leaves, thinly sliced
- 1/4 cup balsamic vinegar
- 1/4 cup extra-virgin olive oil
- Sea salt and freshly ground black pepper, to taste
- In a medium bowl, combine the avocados, tomatoes and basil.
- In a small bowl, whisk together the balsamic vinegar and olive oil.
- Pour the dressing over the avocado mixture and gently stir to combine.
- Season with sea salt and freshly ground black pepper to taste.
- Serve immediately.
