Asparagus Soup
Ingredients
  • 1 bunch of asparagus
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/4 teaspoon ground nutmeg
  • Salt and pepper to taste

Steps
  1. Trim the asparagus and cut into 1-inch pieces.
  2. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  3. Add the asparagus and cook for another 3 minutes.
  4. Pour in the vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for 10 minutes.
  5. Remove from heat and add salt, pepper, and nutmeg. Puree with an immersion blender or transfer to a blender or food processor.
  6. Serve warm.
