- 1 9-inch unbaked pie crust
- 1/4 cup butter
- 3 tablespoons all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 1/2 cups milk
- 3 eggs, beaten
- 2 cups shredded Swiss cheese
- 2 cups chopped cooked asparagus
- Preheat oven to 375 degrees F (190 degrees C).
- In a medium saucepan, melt butter over medium heat.
- Stir in flour, salt and pepper until smooth.
- Gradually stir in milk.
- Cook, stirring constantly, until mixture thickens and boils.
- Remove from heat.
- Stir a small amount of hot mixture into beaten eggs; return all to the pan and stir well.
- Add cheese and asparagus; pour into pie crust.
- Bake in preheated oven for 25 minutes or until a knife inserted near the center comes out clean.
