Asparagus Quiche
Ingredients
  • 1 9-inch unbaked pie crust
  • 1/4 cup butter
  • 3 tablespoons all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 1/2 cups milk
  • 3 eggs, beaten
  • 2 cups shredded Swiss cheese
  • 2 cups chopped cooked asparagus

Steps
  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a medium saucepan, melt butter over medium heat.
  3. Stir in flour, salt and pepper until smooth.
  4. Gradually stir in milk.
  5. Cook, stirring constantly, until mixture thickens and boils.
  6. Remove from heat.
  7. Stir a small amount of hot mixture into beaten eggs; return all to the pan and stir well.
  8. Add cheese and asparagus; pour into pie crust.
  9. Bake in preheated oven for 25 minutes or until a knife inserted near the center comes out clean.
