Asparagus Frittata
Ingredients
  • 6 eggs
  • 1/4 cup milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 bunch asparagus, trimmed and cut into 1-inch pieces

Steps
  1. Preheat oven to 375°F.
  2. In a medium bowl, whisk together eggs, milk, salt and pepper.
  3. Heat olive oil in an oven-safe skillet over medium heat. Add onion and garlic; cook until softened, about 5 minutes.
  4. Add asparagus; cook until just tender, about 5 minutes more.
  5. Pour egg mixture into the skillet and stir to combine. Cook for 2 minutes without stirring.
  6. Transfer skillet to preheated oven and bake until frittata is golden brown and set in the center, about 15 minutes.
  7. Let cool slightly before serving.
