- 4 cups fresh asparagus, cut into 1-inch pieces
- 6 slices bacon, cooked and crumbled
- 1/2 cup shredded Parmesan cheese
- 1/4 cup olive oil
- 3 tablespoons red wine vinegar
- 1 teaspoon Dijon mustard
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Preheat oven to 400 degrees F.
- In a large bowl, combine asparagus and bacon.
- In a small bowl, whisk together Parmesan cheese, olive oil, red wine vinegar, Dijon mustard, garlic powder, salt and pepper.
- Pour dressing over asparagus mixture and toss to coat.
- Spread mixture onto a baking sheet lined with parchment paper.
- Bake for 15 minutes or until asparagus is tender.
