Ingredients
  • 4 cups fresh asparagus, cut into 1-inch pieces
  • 6 slices bacon, cooked and crumbled
  • 1/2 cup shredded Parmesan cheese
  • 1/4 cup olive oil
  • 3 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Steps
  1. Preheat oven to 400 degrees F.
  2. In a large bowl, combine asparagus and bacon.
  3. In a small bowl, whisk together Parmesan cheese, olive oil, red wine vinegar, Dijon mustard, garlic powder, salt and pepper.
  4. Pour dressing over asparagus mixture and toss to coat.
  5. Spread mixture onto a baking sheet lined with parchment paper.
  6. Bake for 15 minutes or until asparagus is tender.
