Ingredients
  • 1 lb. asparagus, trimmed
  • 6 slices bacon, cooked and crumbled
  • 1/4 cup sliced red onion
  • 1/4 cup crumbled feta cheese
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Steps
  1. Bring a large pot of salted water to a boil. Add the asparagus and cook for 3 minutes. Drain the asparagus and rinse with cold water to stop the cooking process.
  2. In a large bowl, combine the cooked asparagus, bacon, red onion, feta cheese, balsamic vinegar, olive oil and Dijon mustard. Season with salt and pepper to taste.
  3. Toss to combine and serve.
  4. Enjoy!
