Ingredients
  • 2 tablespoons vegetable oil
  • 1 onion, diced
  • 1 teaspoon minced garlic
  • 2 tablespoons grated fresh ginger root
  • 2 tablespoons soy sauce
  • 2 cups chicken broth
  • 1/4 teaspoon white pepper
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon ground coriander
  • 3 ounces thin rice noodles
  • 6 ounces cooked chicken, shredded or diced

Steps
  1. Heat the oil in a large saucepan over medium heat.
  2. Add the onion and garlic and cook until softened, about 5 minutes.
  3. Stir in the ginger and soy sauce and cook for 1 minute.
  4. Pour in the chicken broth, white pepper, cumin, and coriander. Bring to a boil.
  5. Add the noodles and chicken. Reduce heat to low and simmer for 8 minutes.
  6. Serve hot.
