Ingredients
  • 2 tablespoons vegetable oil
  • 1 teaspoon sesame oil
  • 1 garlic clove, minced
  • 1 inch piece of ginger, grated
  • 2 cups sliced mushrooms
  • 1 red bell pepper, diced
  • 1 head of broccoli, cut into florets
  • 2 carrots, sliced into thin strips
  • 2 tablespoons soy sauce

Steps
  1. Heat the vegetable oil and sesame oil in a large skillet over medium-high heat.
  2. Add the garlic and ginger and cook for 1 minute.
  3. Add the mushrooms, bell pepper, broccoli and carrots to the pan and stir fry for 5 minutes.
  4. Add the soy sauce and continue to stir fry for another 3 minutes or until vegetables are tender.
