- 2 tablespoons vegetable oil
- 1 teaspoon sesame oil
- 1 garlic clove, minced
- 1 inch piece of ginger, grated
- 2 cups sliced mushrooms
- 1 red bell pepper, diced
- 1 head of broccoli, cut into florets
- 2 carrots, sliced into thin strips
- 2 tablespoons soy sauce
- Heat the vegetable oil and sesame oil in a large skillet over medium-high heat.
- Add the garlic and ginger and cook for 1 minute.
- Add the mushrooms, bell pepper, broccoli and carrots to the pan and stir fry for 5 minutes.
- Add the soy sauce and continue to stir fry for another 3 minutes or until vegetables are tender.
