Ingredients
  • 4 cups arugula
  • 1/4 cup walnuts, toasted and chopped
  • 1/4 cup dried cranberries
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and freshly ground pepper

Steps
  1. In a large bowl, combine the arugula, walnuts and cranberries. In a small bowl, whisk together the olive oil and balsamic vinegar. Pour over the salad and toss to coat.
  2. Season with salt and pepper to taste.
  3. Serve immediately.
