Arugula Pesto
Ingredients
  • 2 cups arugula
  • 1/4 cup pine nuts
  • 3 cloves garlic
  • 1/3 cup extra-virgin olive oil
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Steps
  1. Put the arugula, pine nuts, garlic, olive oil, Parmesan cheese and salt and pepper in a food processor or blender.
  2. Process until smooth.
  3. Taste and adjust seasoning if necessary.
