- 2 cups of fresh apricots, pitted and chopped
- 1/2 cup of white sugar
- 1/2 cup of light brown sugar
- 1 tablespoon of lemon juice
- In a medium saucepan, combine the apricots, white sugar, brown sugar and lemon juice.
- Bring to a boil over medium-high heat, stirring constantly.
- Reduce heat to low and simmer for 20 minutes, stirring occasionally.
- Remove from heat and let cool.
- Transfer to an airtight container and store in the refrigerator until ready to use.
