Apricot Jam
Ingredients
  • 2 cups of fresh apricots, pitted and chopped
  • 1/2 cup of white sugar
  • 1/2 cup of light brown sugar
  • 1 tablespoon of lemon juice

Steps
  1. In a medium saucepan, combine the apricots, white sugar, brown sugar and lemon juice.
  2. Bring to a boil over medium-high heat, stirring constantly.
  3. Reduce heat to low and simmer for 20 minutes, stirring occasionally.
  4. Remove from heat and let cool.
  5. Transfer to an airtight container and store in the refrigerator until ready to use.
