Apple Pie Pancakes
Ingredients
  • 2 cups all-purpose flour
  • 2 tablespoons white sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 2 eggs, lightly beaten
  • 1 1/2 cups buttermilk
  • 3 tablespoons butter, melted
  • 1 teaspoon vanilla extract

Steps
  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt and cinnamon.
  2. In a separate bowl, beat eggs then whisk in buttermilk, butter and vanilla.
  3. Make a well in the center of the dry ingredients and pour in the wet ingredients. Stir until just combined.
  4. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
  5. Top with syrup or applesauce
