Apple Pie Cupcakes
Ingredients
  • 1/2 cup butter
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup milk

Steps
  1. Preheat oven to 350 degrees F (175 degrees C). Line a muffin tin with paper liners.
  2. In a medium bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla.
  4. Combine the flour, baking powder and salt; stir into the batter alternately with the milk.
  5. Fill each muffin cup 3/4 full with batter.
  6. Bake for 20 to 25 minutes in the preheated oven, or until a toothpick inserted into the center of a cupcake comes out clean.
  7. Let cool in tin for 10 minutes before removing to cool completely on a wire rack.
