Apple Fritters
Ingredients
  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 3/4 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 3/4 cup milk
  • 2 large eggs, lightly beaten
  • 2 tablespoons butter, melted and cooled slightly
  • 1 teaspoon vanilla extract
  • 1-1/2 cups chopped apples

Steps
  1. In a medium bowl, whisk together the flour, sugar, baking powder, cinnamon, salt, nutmeg and ginger.
  2. In a separate bowl, whisk together the milk, eggs, butter and vanilla.
  3. Stir the wet ingredients into the dry ingredients until combined. Fold in the apples.
  4. Heat 2 inches of oil in a large pot or Dutch oven over medium-high heat to 375°F (190°C). Line a baking sheet with paper towels.
  5. Drop heaping tablespoons of batter into the hot oil and fry until golden brown on both sides. Remove with a slotted spoon and transfer to the prepared baking sheet; let cool slightly before serving.
  6. Enjoy!
