In a medium bowl, whisk together the flour, sugar, baking powder, cinnamon, salt, nutmeg and ginger.
In a separate bowl, whisk together the milk, eggs, butter and vanilla.
Stir the wet ingredients into the dry ingredients until combined. Fold in the apples.
Heat 2 inches of oil in a large pot or Dutch oven over medium-high heat to 375°F (190°C). Line a baking sheet with paper towels.
Drop heaping tablespoons of batter into the hot oil and fry until golden brown on both sides. Remove with a slotted spoon and transfer to the prepared baking sheet; let cool slightly before serving.
