- 2 cups all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 2 eggs, beaten
- 1 3/4 cups milk
- 3 tablespoons butter, melted and cooled slightly
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon and salt.
- In a separate bowl, whisk together the eggs, milk and melted butter.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Heat a large non-stick skillet over medium heat. Grease with butter if needed.
- Using a 1/4 cup measure or ladle, pour batter onto hot skillet. Cook until bubbles start to form on the surface of pancakes (about 2 minutes).
- Flip pancakes and cook for an additional minute or two until golden brown on both sides.
- Serve with syrup or your favorite topping!
