Ingredients
  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 2 eggs, beaten
  • 1 3/4 cups milk
  • 3 tablespoons butter, melted and cooled slightly

Steps
  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon and salt.
  2. In a separate bowl, whisk together the eggs, milk and melted butter.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Heat a large non-stick skillet over medium heat. Grease with butter if needed.
  5. Using a 1/4 cup measure or ladle, pour batter onto hot skillet. Cook until bubbles start to form on the surface of pancakes (about 2 minutes).
  6. Flip pancakes and cook for an additional minute or two until golden brown on both sides.
  7. Serve with syrup or your favorite topping!
