- 1 cup graham cracker crumbs
- 2 tablespoons butter, melted
- 1/4 teaspoon ground cinnamon
- 1 (8 ounce) package cream cheese, softened
- 3/4 cup white sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1/4 cup caramel ice cream topping
- Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch square baking pan.
- In a medium bowl, mix together the graham cracker crumbs, melted butter and cinnamon. Press into the bottom of the prepared pan.
- In a large bowl, beat together the cream cheese and sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Pour over the crust.
- Bake in preheated oven for 25 to 30 minutes, or until center is almost set. Cool completely before cutting into bars.
- Drizzle with caramel topping before serving.
