- 1 lb potatoes, peeled and cubed
- 3 tablespoons oil
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 2 cups spinach, chopped
- Salt to taste
- Heat oil in a pan over medium heat. Add cumin seeds and let them sizzle.
- Add the potatoes and stir-fry for about 5 minutes.
- Add turmeric powder, coriander powder and salt. Stir-fry for another 5 minutes.
- Add spinach and stir-fry for about 2 minutes.
- Cover the pan with a lid and cook for another 10 minutes or until potatoes are cooked through.
- Serve hot with chapatis or rice.
