- Rice paper
- Rice vermicelli
- Cucumber, julienned
- Carrot, julienned
- Red bell pepper, julienned
- Avocado, sliced
- Mint leaves
- Cilantro leaves
- Soak rice paper in warm water for 10-15 seconds.
- Lay rice paper on a plate and fill with rice vermicelli, cucumber, carrot, bell pepper, avocado and herbs.
- Fold the sides of the rice paper in then roll up tightly.
- Repeat with remaining ingredients. Serve with peanut sauce or your favorite dipping sauce.
