Ingredients
  • Rice paper
  • Rice vermicelli
  • Cucumber, julienned
  • Carrot, julienned
  • Red bell pepper, julienned
  • Avocado, sliced
  • Mint leaves
  • Cilantro leaves

Steps
  1. Soak rice paper in warm water for 10-15 seconds.
  2. Lay rice paper on a plate and fill with rice vermicelli, cucumber, carrot, bell pepper, avocado and herbs.
  3. Fold the sides of the rice paper in then roll up tightly.
  4. Repeat with remaining ingredients. Serve with peanut sauce or your favorite dipping sauce.
