- 8 rice paper wrappers
- 1/2 cup cooked shrimp, cut into small pieces
- 1/2 cup cooked pork, cut into small pieces
- 1/2 cup cooked chicken, cut into small pieces
- 1/2 cup shredded carrots
- 1/2 cup shredded cucumber
- 1/4 cup chopped cilantro leaves
- 1/4 cup chopped mint leaves
- Soak one wrapper in warm water for about 10 seconds. Lay it flat on a plate.
- Lay the shrimp, pork, chicken, carrots, cucumber, cilantro and mint in a line near the bottom edge of the wrapper.
- Roll the wrapper up tightly around the filling.
- Repeat with the remaining wrappers and filling. Serve with peanut sauce.
