In a medium bowl, combine the pork, fish sauce, lime juice, brown sugar, chili paste or sriracha, garlic and ginger. Stir to combine and set aside.
Heat the vegetable oil in a large skillet over medium-high heat. Add the pork mixture and cook until the pork is cooked through and no longer pink, about 5 minutes.
Add the cooked rice noodles or vermicelli noodles to the skillet and toss to combine with the pork. Cook for an additional 2 minutes.
Remove from heat and stir in the shredded carrots, cilantro leaves, mint leaves and roasted peanuts.
