Ingredients
  • 1/2 lb. pork tenderloin, thinly sliced
  • 3 tablespoons fish sauce
  • 2 tablespoons lime juice
  • 1 tablespoon brown sugar
  • 1 teaspoon chili paste or sriracha
  • 2 cloves garlic, minced
  • 1/4 teaspoon ground ginger
  • 2 tablespoons vegetable oil
  • 4 cups cooked rice noodles or vermicelli noodles
  • 1 cup shredded carrots
  • 1/2 cup chopped cilantro leaves
  • 1/4 cup chopped mint leaves
  • 1/4 cup chopped roasted peanuts

Steps
  1. In a medium bowl, combine the pork, fish sauce, lime juice, brown sugar, chili paste or sriracha, garlic and ginger. Stir to combine and set aside.
  2. Heat the vegetable oil in a large skillet over medium-high heat. Add the pork mixture and cook until the pork is cooked through and no longer pink, about 5 minutes.
  3. Add the cooked rice noodles or vermicelli noodles to the skillet and toss to combine with the pork. Cook for an additional 2 minutes.
  4. Remove from heat and stir in the shredded carrots, cilantro leaves, mint leaves and roasted peanuts.
  5. Serve warm or at room temperature.
