Ingredients
  • 2 cups cooked jasmine rice
  • 2 tablespoons vegetable oil
  • 1/2 cup diced onion
  • 3 cloves garlic, minced
  • 1/2 cup diced carrots
  • 1/2 cup frozen peas and carrots, thawed
  • 1 teaspoon fish sauce
  • 3 tablespoons soy sauce

Steps
  1. Heat the oil in a large skillet over medium-high heat. Add the onion and garlic and cook until softened, about 5 minutes.
  2. Add the carrots and peas and carrots and cook for another 3 minutes.
  3. Add the cooked rice to the pan and stir to combine. Cook for another 5 minutes.
  4. Add the fish sauce and soy sauce to the pan and stir to combine. Cook for another 2 minutes.
  5. Serve hot.
