Ingredients
  • 1/4 cup fish sauce
  • 1/4 cup sugar
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 pound pork shoulder, cut into 1-inch cubes
  • 1/4 teaspoon freshly ground black pepper

Steps
  1. Heat the oil in a large skillet over medium heat. Add the garlic and cook until fragrant, about 1 minute.
  2. Add the pork and season with black pepper. Cook, stirring occasionally, until lightly browned on all sides, about 8 minutes.
  3. In a small bowl, whisk together the fish sauce and sugar until the sugar is dissolved.
  4. Pour the fish sauce mixture into the skillet. Bring to a boil and reduce heat to low. Simmer until the pork is tender and coated with a thick caramel glaze, about 15 minutes.
