Ingredients
  • 2 tablespoons vegetable oil
  • 1 pound beef stew meat, cut into small cubes
  • 4 cloves garlic, minced
  • 1 teaspoon grated fresh ginger root
  • 1/4 cup fish sauce
  • 3 tablespoons soy sauce
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons brown sugar
  • 6 cups beef broth
  • 2 tablespoons freshly squeezed lime juice
  • 2 (3-inch) cinnamon sticks
  • 4 star anise pods
  • 8 ounces dried rice noodles, cooked according to package directions

Steps
  1. Heat the oil in a large pot over medium-high heat. Add the beef and cook until browned on all sides, about 5 minutes. Add the garlic and ginger and cook for 1 minute more.
  2. Add the fish sauce, soy sauce, pepper, brown sugar, beef broth, lime juice, cinnamon sticks and star anise. Bring to a boil then reduce heat to low and simmer for 1 hour.
  3. Strain the soup through a fine mesh sieve into a clean pot. Discard the solids.
  4. Return the soup to a simmer and add the cooked noodles. Simmer for 5 minutes more before serving.
