Vegetarian Lo Mein
Ingredients
  • 8 oz. lo mein noodles
  • 2 tablespoons sesame oil
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 2 cups shredded cabbage
  • 1 red bell pepper, seeded and sliced thin
  • 3 green onions, sliced thin
  • 1/4 cup vegetable broth

Steps
  1. Bring a large pot of water to a boil. Cook the lo mein noodles according to package instructions.
  2. Heat the sesame oil in a large skillet over medium-high heat. Add the garlic and ginger and cook for 1 minute, stirring constantly.
  3. Add the cabbage, bell pepper, and green onions. Cook for 3 minutes, stirring occasionally.
  4. Add the cooked noodles and vegetable broth and stir to combine. Cook for an additional 2 minutes or until heated through.
  5. Serve hot.
