- 8 oz. lo mein noodles
- 2 tablespoons sesame oil
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger
- 2 cups shredded cabbage
- 1 red bell pepper, seeded and sliced thin
- 3 green onions, sliced thin
- 1/4 cup vegetable broth
- Bring a large pot of water to a boil. Cook the lo mein noodles according to package instructions.
- Heat the sesame oil in a large skillet over medium-high heat. Add the garlic and ginger and cook for 1 minute, stirring constantly.
- Add the cabbage, bell pepper, and green onions. Cook for 3 minutes, stirring occasionally.
- Add the cooked noodles and vegetable broth and stir to combine. Cook for an additional 2 minutes or until heated through.
- Serve hot.
