Vegetarian Jambal…
Ingredients
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (optional)
  • 3 cups vegetable broth
  • 1 (14.5 ounce) can diced tomatoes, drained and rinsed
  • 3 cups cooked long-grain brown rice (or white rice)
  • 2 tablespoons tomato paste
  • 2 teaspoons Worcestershire sauce (optional)

Steps
  1. Heat the olive oil in a large pot over medium heat. Add the onion, bell pepper and celery and cook until softened, about 5 minutes.
  2. Add the garlic, smoked paprika, oregano and cayenne pepper (if using), and stir to combine.
  3. Add the vegetable broth, tomatoes, cooked rice and tomato paste. Stir to combine.
  4. Bring the mixture to a boil then reduce heat to low and simmer for 20 minutes.
  5. Stir in the Worcestershire sauce (if using). Taste and adjust seasoning as needed.
  6. Serve hot.
