- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow onion, sliced
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- Salt and freshly ground black pepper to taste
- Heat the olive oil in a large skillet over medium heat.
- Add the bell peppers, onion, garlic, chili powder and cumin. Cook until vegetables are softened.
- Season with salt and black pepper to taste.
- Serve with warm tortillas.
