Ingredients
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 red bell pepper, diced
  • 3 cups vegetable broth
  • 14.5 ounces canned diced tomatoes with juice
  • 1/4 teaspoon dried thyme leaves

Steps
  1. Heat the oil in a large pot over medium heat.
  2. Add the onion and garlic and cook until softened, about 5 minutes.
  3. Add the carrots and celery and cook until softened, about 5 minutes.
  4. Add the bell pepper and cook for another 2 minutes.
  5. Add the broth, tomatoes with juice and thyme.
  6. Bring to a boil then reduce heat to low and simmer for 15 minutes.
  7. Serve hot.
