- 2 bell peppers, diced
- 1 large onion, diced
- 2 zucchini, diced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Preheat oven to 400 degrees F (200 degrees C).
- In a large bowl, combine bell peppers, onion, zucchini and olive oil. Season with salt and pepper.
- Thread vegetables onto skewers. Place on a baking sheet.
- Bake in preheated oven for 20 minutes, or until vegetables are tender.
- Serve warm.
