Vegan Quinoa Salad
Ingredients
  • 1 cup quinoa
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced cucumber
  • 1/4 cup diced red onion
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and freshly ground black pepper to taste

Steps
  1. Rinse the quinoa in a fine mesh strainer and place it in a medium saucepan with 2 cups of water.
  2. Bring to a boil, reduce heat to low, cover and simmer for 15 minutes.
  3. Remove from the heat and let stand for 5 minutes.
  4. Transfer the cooked quinoa to a large bowl and fluff with a fork.
  5. Add the bell pepper, cucumber, red onion, parsley, olive oil, lemon juice, salt and pepper. Stir until combined.
  6. Serve chilled or at room temperature.
