Vegan Lentil Curry
Ingredients
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 cups dried green lentils
  • 1 teaspoon ground cumin
  • 1 teaspoon garam masala
  • ½ teaspoon ground turmeric
  • ¼ teaspoon cayenne pepper (optional)
  • 4 cups vegetable broth or water
  • Salt and pepper to taste

Steps
  1. In a large pot over medium heat, sauté the onion and garlic in the olive oil until the onion is translucent.
  2. Add the lentils, cumin, garam masala, turmeric and cayenne pepper. Stir to combine.
  3. Add the vegetable broth or water and bring to a boil. Reduce heat to low and simmer for 25-30 minutes or until the lentils are tender.
  4. Season with salt and pepper to taste.
  5. Serve hot.
