- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup vegan sugar
- 1/2 cup vegan butter, melted and cooled slightly
- 3 tablespoons unsweetened applesauce
- 2 teaspoons pure vanilla extract
- 3/4 cup non-dairy milk (almond or soy)
- 1 cup vegan chocolate chips
- Preheat oven to 375°F. Line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, baking powder, baking soda and salt.
- In a separate bowl, whisk together the sugar, butter, applesauce and vanilla until well combined.
- Pour the wet ingredients into the dry ingredients and whisk until just combined.
- Gently fold in the non-dairy milk and chocolate chips.
- Divide the batter among the prepared muffin tin. Bake for 18-20 minutes or until a toothpick inserted in center comes out clean.
- Let cool in pan for 5 minutes before transferring to a wire rack to cool completely.
