Ingredients
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup vegan sugar
  • 1/2 cup vegan butter, melted and cooled slightly
  • 3 tablespoons unsweetened applesauce
  • 2 teaspoons pure vanilla extract
  • 3/4 cup non-dairy milk (almond or soy)
  • 1 cup vegan chocolate chips

Steps
  1. Preheat oven to 375°F. Line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, baking soda and salt.
  3. In a separate bowl, whisk together the sugar, butter, applesauce and vanilla until well combined.
  4. Pour the wet ingredients into the dry ingredients and whisk until just combined.
  5. Gently fold in the non-dairy milk and chocolate chips.
  6. Divide the batter among the prepared muffin tin. Bake for 18-20 minutes or until a toothpick inserted in center comes out clean.
  7. Let cool in pan for 5 minutes before transferring to a wire rack to cool completely.
