- 1 cup white rice
- 1/2 cup tomatillos, diced
- 1/4 cup onion, diced
- 1/4 cup green pepper, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 2 cups chicken broth or vegetable broth
- In a medium saucepan, heat the olive oil over medium heat. Add the onion, green pepper and garlic and sauté until the vegetables are tender.
- Add the rice and stir to coat with oil. Add the tomatillos and stir to combine.
- Add the broth and bring to a boil. Reduce heat to low, cover and simmer for 20 minutes or until all of the liquid is absorbed.
- Remove from heat and let stand for 5 minutes before fluffing with a fork.
