Tomatillo Rice
Ingredients
  • 1 cup white rice
  • 1/2 cup tomatillos, diced
  • 1/4 cup onion, diced
  • 1/4 cup green pepper, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 2 cups chicken broth or vegetable broth

Steps
  1. In a medium saucepan, heat the olive oil over medium heat. Add the onion, green pepper and garlic and sauté until the vegetables are tender.
  2. Add the rice and stir to coat with oil. Add the tomatillos and stir to combine.
  3. Add the broth and bring to a boil. Reduce heat to low, cover and simmer for 20 minutes or until all of the liquid is absorbed.
  4. Remove from heat and let stand for 5 minutes before fluffing with a fork.
